Mom always made these with fresh picked rhubarb from Dad’s garden.  I have always loved them!  I hope you will enjoy them too!

Rhubarb Strawberry Bars

Crust:
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup soft butter
2 eggs
2 Tablespoons milk

Filling:
4 cups chopped rhubarb
1 (6 oz – that’s the large box) pkg. strawberry jello

Topping:
1/2 cup soft butter
1 cup sugar
1 cup flour

Mix flour, baking powder and salt. Cut in butter. Add eggs and milk. Pat mixture into a greased 9×13 inch pan. Cover crust with rhubarb and sprinkle dry jello mix over fruit. Mix together topping and sprinkle over the rhubarb layer. Bake for 50-60 minutes at 350 degrees.
