Sometimes on a hot summer day you need/want to make a pan of bars for a cookout or just to have on hand, but you do not want to heat up the oven. This is a recipe I found on Allrecipes.com that turned out to be a winner!
1 cup butter
2 cups graham cracker crumbs
2 cups confectioners’ sugar
1 cup peanut butter
1 1/2 cup semisweet chocolate chips (I used milk chocolate.)
4 Tablespoons peanut butter
In a medium bowl, mix together the butter, graham cracker crumbs, confectioners sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9×13 inch pan.
In a metal bowl over simmering water (or in the microwave) melt the chocolate chips with the 4 Tablespoons of peanut butter, stirring occasionally until smooth. Spread over the prepared crust. Refrigerate for at least one hour before cutting into squares.
