I always used to “cheat” and make pancakes using Bisquick mix. One weekend I had a huge craving for pancakes, but we didn’t have any Bisquick in the house. Surely there HAD to be a recipe online to make them from scratch right? I found a winner. I used allrecipes again, and their website says it was contributed by Dakota Kelly. We love them and make them often. Leftovers freeze well.
Good Old Fashioned Pancakes
1 1/2 cups flour
3 1/2 teaspoon baking powder
1 teaspoon salt
1 Tablespoon sugar
3 Tablespoons melted butter
1 1/4 cup milk
1 teaspoon vanilla
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Chocolate chips or peanut butter chips are VERY nummy in these pancakes as well!
Note: We use a non-stick electric skillet and make four at a time. We do not put any oil in it.
