I do not know Mrs.  Hardesty. I found this recipe online. I believe from Facebook. Anyways, it is GOOD! 🙂

1 1/2 cups canola oil
2 cups sugar
3 whole eggs
3 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons vanilla
3 cups fresh chopped apples
1 cup chopped nuts
Raisins, optional

Preheat oven to 350 degrees. Spray or grease a 9 x 13 inch pan, sprinkle flour and finish by sprinkling with cinnamon or cinnamon sugar. 
1. Mix the oil and sugar together and then add the eggs, salt, baking soda, and vanilla.
2. Gradually add in the all purpose flour. Mix until well incorporated. 
3. Hand stir in the apples and nuts and raisins.
4. Bake at 350 for 1 hour. Check with a toothpick.

1 stick butter
1 cup brown sugar
1/4 cup evaporated milk

Bring all ingredients to a boil; let cool slightly. Add 1 teaspoon vanilla and pour over the cooled cake.

You can sprinkle chopped nuts on top if you like.


(I used a pouch of Sunmaid raisins, and I sprinkled cinnamon sugar on top before baking.)
