A couple of weeks ago Tim and I had a lil cookout with our dear friend Betty. She always goes above and beyond. We had a great snack, and then she grilled some asparagus and flank steak and served it with baked red potatoes with swiss cheese. Yummy!!! 

The snack was a nice dip, and I would like to share the recipe with you. 

Betty served this dip with sweet peppers and carrot sticks. She said she also spreads it on tortillas, rolls them up and slices them into lil pinwheels.  I plan on making them for my brother’s 4th of July cookout. 

Betty’s Salsa Pinwheels 
8 oz cream cheese
1 small can green chiles, chopped
2 Tablespoons black olives, chopped
1/4 cup thick n chunky salsa
4 oz shredded sharp cheddar cheese

Mix all ingredients together. Spread on tortillas, roll and slice…or use it as a yummy veggie dip!
