I needed a quick supper. Again. My schedule and Tim’s didn’t mesh well that week, so it was quick suppers every night. I wanted something that was somewhat healthy. This recipe had been pinned over on Pinterest a while back. I had everything but the canned chicken. I did not have time to make chicken, so I did it. I bought canned chicken breast. Man, that is not cheap, but in a pinch, it worked out great! I bought the Swanson brand because it was on sale.
This recipe came from a blog called Together as Family.
I put everything in my slow cooker and put it on low for about six and a half hours. It was just fine and worked better with our schedule.
I increased the cumin, chili powder and garlic powder to 1 teaspoon each. I just love cumin!
I also used 3 Tablespoons of Savory Spice Shop taco seasoning instead of a packet of taco seasoning.
7 Can Taco Soup
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 can petite diced tomatoes, do not drain
1 can sweet corn, drained
1 12.5 oz can chicken breast, drained and flaked
1 10 oz can green enchilada sauce
1 14 oz can low sodium chicken broth
1 packet taco seasoning
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
Combine all ingredients into a large soup pot and bring to a boil over medium-high heat. Once boiling reduce heat to low and let simmer for 20 – 30 minutes. Stir occasionally.
Serve with tortilla chips, shredded cheese, sour cream, and/or avocado.
